TYPICAL FOOD FROM YOUR AREA:
Galician Broth.
This is the most popular dish in the rural Galician kitchen.
The meal takes simple items that could be found in one's own garden. For its development, you have to use the typical turnip tops (leaves in a kind of turnip that is found in Galicia), but if you don’t have any, you may replace them by cabbage.
Ingredients for 6 people:
  • 300 grams of white beans.
  • 3 / 4 kilo of potatoes.
  • 1 bunch of turni tops.
  • 400 grams of a pork bone150 grams of fat salty.
  • 250 grams of beef.
  • 1 sausage Galician.
  • 50 grams of lard (unto)
  • Salt to taste.

Preparation:
Leave the beans soaking from the night before.
Put a high pot or kettle in the cooker with about 2.5 liters of water, beans, meat, sausage and pork bone.
When it starts to boil, take the lard and let it cook over a low heat for 1 hour or less.
Add the turni tops, well washed with sliced potatoes and cut in large pieces.
Add and let it cook until everything is well cooked.
To make it thick, you can draw a few potatoes and beans and crush them with a bit of broth and add this paste to the pot, mixing everything. Everyhhing has to be served with the soup, beans, potatoes and turni tops; otherwise you can take the meat to make some croquettes.

Maybe tha "otherwise" doesn't have much sense; maybe we can use "you can also use..."
