Crème caramel

Ingredients for 4 people:
. 4 eggs
. half a litre of milk
. 200 g. of sugar
. half a cinnamon stick.
. lemon rind.

This is a very easy and traditional recipe. You can change any ingredient if you want to give it a different flavour.

First of all, you have to do the caramel, so put some spoons of sugar in a frying pan or in a saucepan and heat it until it turns brown and liquid, but don't forget to stir it all the time. Be careful when you heat it, because it can be burnt if you heat it too much. When it is brown and liquid, but not burnt, put it into different ramekins, moving each of them while you are dropping the caramel so that each ramekin can have the bottom covered with the caramel. Let them cool off until the caramel turns solid again.

After that, you can prepare the custard. First, preheat the oven to 180°C and then pour the milk in a saucepan and add the cinnamon stick and the lemon rind and bring it to the boil.

While the milk with the cinnamon and the lemon rind is heating you can put the eggs in a bowl and whisk them until they are well-blended. Just after that you can add the sugar the the eggs and go on whisking until they are very uniform.

When the milk boils, turn off the cooker and remove the cinnamon and the lemon rind and add the milk to the eggs and the sugar. Mix it well with a whisk or a mixer and when everything is well mixed, pour the custard into the caramel-lined ramekins.

Take a deep baking dish and fill it with water to come halfway up the sides of the ramekins and cover the dish with foil. Bake them until just set, 25 to 50 min. Remember to start checking early; baking time will depend on the thickness and depth of your ramekins and baking dish. Carefully remove the baking dish from the oven and let the ramekins cool in the water bath. Remove from the water and cover them with plastic wrap and refrigerate them at least 2 hours or up to 2 days.

Run a thin knife around the edge of the custard and invert onto a dessert plate, scraping any caramel from the ramekin onto the custard.

That's all. As you can see it's very easy and delicious.
